What I Eat in a Day: First Trimester Edition 🌱

As I write this, I'm in the first trimester of my second plant-based pregnancy. While every pregnancy is different, I always find it helpful and inspiring to see what other women are eating during this season of life, so I thought I'd share an ideal day of eating from my own kitchen.


Before we dive in, I want to emphasize that this post is not meant to be a comparison or a standard to measure yourself against. Pregnancy nutrition can look wildly different from one person to the next—and even from one week to the next. While this day reflects how I eat when I'm feeling my best, there were also several weeks during my first trimester when all I could stomach were fruit, sourdough toast, perogies, and noodles. If you're currently surviving on a handful of foods, know that you're not alone. Sometimes the goal is simply to eat what you can, when you can.


Pregnancy is a season of adapting, listening to your body, and extending yourself plenty of grace. I hope this post offers some inspiration, practical meal ideas, and reassurance that nourishing yourself doesn't have to look perfect.

Most mornings start with a nutrient-packed smoothie. During pregnancy, I find smoothies to be one of the easiest ways to pack in a variety of nourishing ingredients without much effort. My go-to blend includes mixed berries, a handful of nuts and seeds, fresh ginger, protein powder, and water kefir.


The berries provide antioxidants and vitamin C, while the nuts and seeds contribute healthy fats, protein, fiber, and important minerals like magnesium and zinc. Ginger has been a staple throughout pregnancy thanks to its well-known ability to help ease nausea and support digestion. The protein powder helps boost satiety and supports the increased protein needs of pregnancy, and the water kefir adds beneficial probiotics for gut health.

Alongside my smoothie, I usually enjoy one of my homemade buckwheat and oat waffles. This adds complex carbohydrates and extra fibre to help keep my energy stable throughout the morning. It's a simple breakfast that leaves me feeling nourished, satisfied, and ready for the day ahead.

My Pregnancy Coffee Ritual

Coffee is one of those things I still genuinely enjoy during pregnancy, but I've made a few adjustments. Because I'm quite sensitive to caffeine and prefer to be extra cautious, I usually make my coffee with about three-quarters decaf and one-quarter regular caffeinated coffee.

I also love blending it with a spoonful of coconut oil and a sprinkle of hemp hearts. This creates a rich, creamy texture while adding healthy fats that help promote sustained energy rather than a quick spike and crash. It's a small ritual that feels comforting and satisfying, especially during a season when many of our usual routines and preferences can shift.

Morning Snack: Apple Slices on the Go

As any toddler parent knows, mornings can move fast. More often than not, my morning snack is something simple that I can grab while we're out exploring, running errands, or playing outside.



Lately, that's usually been a crisp apple sliced up and eaten on the go while chasing my toddler around. Apples are packed with fibre, hydration, and vitamin C, making them an easy and refreshing option when I need a quick energy boost between meals. Sometimes the simplest snacks are the ones that work best, especially during pregnancy when convenience often matters just as much as nutrition.

Lunch: A Nourishing Pregnancy Plate

Lunch is often a mix of simple foods that come together to create a nutrient-dense meal. One of my favorite combinations lately has been edamame, kimchi, a seaweed snack, sourdough bread, and my creamy white bean spread (recipe linked here)


This meal may seem simple, but it packs a surprising nutritional punch. Edamame is an excellent source of plant-based protein, fiber, folate, and iron—all key nutrients during pregnancy. The white bean spread adds even more protein and fiber while helping to keep blood sugar balanced and hunger at bay. Kimchi contributes beneficial probiotics that support gut health and digestion, while seaweed provides trace minerals, including iodine, which plays an important role in thyroid function and baby's neurological development. Paired with hearty sourdough bread for energy and satisfaction, it's a lunch that feels both nourishing and easy to throw together.

Dessert: Coconut Yogurt Bowl & Nettle Tea

I love incorporating a little something sweet into my afternoon, and one of my favorite options is coconut yogurt topped with granola and frozen berries, paired with a warm cup of nettle tea.


The berries provide antioxidants and vitamin C, while the granola adds crunch, fiber, and staying power. Coconut yogurt offers a creamy, satisfying base, and choosing one with live cultures can also support gut health. Alongside it, I often sip on nettle tea, which has long been valued for its naturally occurring minerals, including iron, magnesium, and calcium. It's a comforting combination that feels both nourishing and indulgent.

Pre-Dinner Snack: Grapefruit

If you've been pregnant before, you probably know that cravings can be surprisingly specific. For me, grapefruit has been one of the strongest cravings in both of my pregnancies.

There's just something about its bright, juicy, tart flavor that I can't get enough of. Beyond satisfying a craving, grapefruit also provides vitamin C, hydration, and antioxidants. Sometimes pregnancy nutrition is about following your body's cues, and this is one food that has consistently found its way into my daily routine.

Dinner: Plant-Based Taco Bowl

Dinner is often a colourful taco bowl loaded with fresh ingredients and plenty of flavor. My bowl usually starts with a base of crunchy romaine lettuce and is topped with tomatoes, guacamole, seasoned plant-based ground, corn, tortilla chips, cashew dressing, and vegan shredded cheese.


This meal offers a balance of carbohydrates, healthy fats, protein, and fiber, making it both satisfying and nutrient-dense. The romaine and tomatoes contribute vitamins and antioxidants, while avocado provides heart-healthy fats that support both mom and baby's development. The plant-based ground adds protein and iron, two nutrients that become increasingly important throughout pregnancy. Between the vegetables, legumes, and healthy fats, it's a meal that leaves me feeling energized and nourished without being overly complicated.

Evening Snack

If I'm hungry later in the evening, I like to keep things simple. Most nights, I'll enjoy a cup of herbal tea or a warm glass of soy milk alongside a slice of sourdough bread.

Soy milk is one of my favourite plant-based staples because it naturally contains protein and is often fortified with nutrients like calcium and vitamin D. Paired with sourdough, it's a cozy way to end the day and helps ensure I'm going to bed feeling satisfied.


Final Thoughts

If there's one thing I've learned through two plant-based pregnancies, it's that flexibility matters far more than perfection. Some days are full of colorful, nutrient-dense meals like the ones shared here, and other days are about simply eating whatever sounds tolerable. Both are okay.


Pregnancy is not the time to strive for flawless nutrition. It's a time to nourish yourself as best you can, honour your body's changing needs, and trust that small choices add up over time. Whether you're currently thriving on smoothies and taco bowls or surviving on toast and noodles, you're doing better than you think.


I hope this peek into a day of eating gives you some meal inspiration and reminds you that nourishing yourself during pregnancy can be simple, enjoyable, and realistic.
